Recipe: Purple Sunset – Ube Cold Foam

The ube cold foam latte is a creamy, subtly sweet drink that layers rich espresso and ube-tinted milk beneath a thick cold foam is perfect for summer menus and any guest who eats with their eyes first. Adds a striking visual moment to your menu with minimal effort.

Ingredients

  • Iced Latted Base:

    • 2 shots of Espresso
    • 5 oz. Milk of choice
    • ½ tsp Ube extract
    • ½ oz simple syrup
    • Vanilla syrup
    • 1 cup ice
  • Cold foam:
    • 3 oz. Heavy cream
    • ¼ tsp Vanilla extract
    • 1 tbsp Powdered sugar
    • Pinch of sea salt

Instructions:

Step 1: Make the ube milk

Stir ube extract into the milk until fully combined. Set aside.

Step 2: Make the cold foam

In a small pitcher or jar, combine heavy cream, vanilla extract, powdered sugar, and sea salt. Froth with a handheld frother until thick and slowly pourable.

Step 3: Build the latte

Fill a glass with ice. Pour in the ube milk, then add the espresso shots on top. Give it a gentle stir to combine.

Step 4. Add the foam

Spoon or pour the cold foam slowly onto the latte. It should sit as a thick layer on top.

Step 5. Print and Serve

On a smooth, even foam surface, print your desired design using the Ripple Maker, and serve immediately. Encourage guests to snap a photo and share it with their friends.
