How to Get Perfect Cocktail Foam: We Put Four Foamers to the Test

Perfect cocktail foam means the difference between a flat drink and a cocktail that commands attention. Whether you are making a classic sour or designing drinks that beg to be photographed (and printed!), the foaming agent you choose determines how the drink looks, tastes, and sells.

We tested four options side by side: egg white, aquafaba, a popular on-the-market option that today we’ll call “the other guys,” against our brand new Ripples Foamer. 

Every cocktail was built on the same recipe (2 oz vodka, 3 oz grapefruit juice, and the foaming agent). We think the results speak for themselves.

Egg White Cocktail Foam: The Classic Standard

Egg whites have been behind the bar for generations. They are easy to access and create that signature frothy texture with a gorgeous sheen. In our test, the foam looked dense, but was still light and airy with a creamy mouthfeel. The foam collapsed around the five minute mark.

Pros: Traditional technique, creamy texture, authentic look.

Cons: Expensive in today’s market, many customers feel weird about drinking raw egg, short shelf life, requires training to master the technique.

Verdict: A classic for a reason, but costly and logistically challenging for modern, mobile bar programs.

Egg whites are the classic choice for a reason. But the time, money, and idea of drinking raw eggs doesn’t make up for the perfect mouthfeel.

Aquafaba in Cocktails: The Vegan Egg White Alternative

Aquafaba is simply the liquid drained from a can of chickpeas. In testing it bubbled easily and created a bright white foam that held well. It lasted as long as the Ripples Foamer, but it carried a distinct beany smell that influenced the flavor of the drink.

Pros: Vegan friendly, stable foam, affordable, accessible.

Cons: Affects smell and flavor, extra prep and storage requirements.

Verdict: An inclusive option with strong foam stability, but the chickpea aroma can distract from the cocktail.

We’ve used aquafaba for cocktail foam for nearly a decade. It gives you smooth foam that lasts a long time, and for our trade show activations that’s the most important element. If you don’t use us use this, but watch out for the beany smell on your cocktails.

The “Other Guys”: Thin and Forgettable

We used slightly more than the recommended 3 dashes, as our research said that would give the best foam. It didn’t help. The result was a thin, lifeless foam with large bubbles that broke apart quickly. Prints looked patchy and distorted, and the foam collapsed almost immediately.

Pros: Simple and easy to use. End of list.

Cons: Sparse foam, large bubbles, poor printing surface, fast collapse.

Verdict: Convenient but ineffective. Not reliable for cocktail service or drink printing.

We won’t be trying this again.

Ripples Foamer: Designed for Drink Performance

The Ripples Foamer produced a gorgeous, bright white sheen with a natural but striking look. The foam held for more than ten minutes, delivering a silky texture and perfect stability for prints. Logos and designs came out sharp, high contrast, and camera ready. There was no affect on flavor.

Pros: Instant foam, stable for more than ten minutes, bright natural color, easy pour, flawless prints.

Cons: Once you try it, it is hard to use anything else.

Verdict: Consistent, reliable, and fast with a fantastic mouthfeel. The best choice for both quality drinks and printed cocktails.

We literally spent the last year inventing it, so of course it’s our favorite. But we wouldn’t have released it if it wasn’t perfect. We don’t just sell Ripples Foamer, we use it every single day.
