We were thrilled when our friend and customer, Malaine Rubin, founder and owner of Laine Too an interactive events agency based in Chicago shared her stunning lemon squares with us.

Lemon squares, an American classic since the 1960’s, have become a favorite at gatherings like weddings and baby showers for their delicious taste, elegant look, and ease of preparation, making them ideal for catered events.

Allowing guests to add Ripples prints to their lemon squares, generously topped with powdered sugar, makes your dessert bar interactive and Instagrammable.

The Ripple Maker drink printing machine adds tiny dots of plant-based vegetable extract (these lemon square use black carrot extract!) to the top of a drink or dessert. With the versatile Ripples platform you’re able to add any illustration, message, or picture to surprise your guests.

For optimal results with lemon square, keep the bars chilled until ready to serve, and choose high contrast line art illustrations for your Ripples print designs.

Ingredients:

CRUST

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup butter

FILLING

  • 4 eggs
  • 2 cups granulated sugar
  • 1 tsp. lemon zest
  • 1/3 cup lemon juice
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder

TOPPING

  • 5 tbsp powdered sugar
  • 1 cartridge Black Carrot Extract (for use with Ripple Maker Printer)


Instructions:

Step 1: Prepare Crust
  1. Combine the flour, powdered sugar & butter for the crust with a pastry blender.
  2. Press dough into a 9″x13″ pan.
  3. Bake at 350° for 15 minutes.
Step 2: Prepare Filling
  1. In a large bowl, whisk the eggs & sugar until well blended
  2. Add in lemon zest & lemon juice into mixture
  3. Sift together four and baking powder
  4. Add flour mixture into the large bowl with the rest of the filing
  5. Whisk all ingredients until well blended
Step 3: Combine
  1. Pour filling over baked crust.
  2. Bake at 350° for 15-20 minutes until lightly browned and set.
Step 4: The Perfect finishing touch
  1. Cool in refrigerator
  2. Top with powdered sugar
  3. Cut into sixteen squares
  4. Print your favorite design with your Ripple Maker printer
