Recipe: Brandy Holiday Sour

I host American Thanksgiving for my family every year, and we have the holiday down to a Science. Each family member is assigned an easily-transportable side dish or appetizer – my husband deep fries the turkey in the driveway, and so once I set the table, chop vegetables and whip up some cranberry sauce on the stove all that’s left for me to do is hang out with my sister.

In honor of that cranberry sauce, this year I’ll be adding this Brandy Holiday Sour to our pre-dinner festivities. The cranberry and orange juices add a holiday flavor that’s a perfect way to kick off the season.

TRICKS FOR A VEGAN FOAM-TOPPED COCKTAIL

Lately I’ve been using vegan cocktail foamer made from reconstituted dried chickpea brine in lieu of egg whites for all of my cocktails. It means my cousin and sister-in-law can join us for drinks, and it leaves me more eggs for making pumpkin pie.

  • Mix 1 tbsp dehydrated aquafaba with 1 cup water.
    Shake well to combine.
  • Replace each egg white in your recipe with 1.5 oz of this aquafaba solution.
  • If dehydrated aquafaba isn’t available, you can use the liquid from a can of chickpeas using the same ratios.

For Ripples-topped cocktails, perfect foam is key – we recommend:

  • Dry shake your cocktail for 20 seconds
  • Wet shake for 40 seconds
  • Fine strain into your cocktail glass

A 5 oz coupe tends to work best — its size makes it easy to fill right to the brim for an optimal canvas.

Brandy Holiday Sour

Equipment

* Cocktail Shaker
* fine strainer
* Ripple Maker II Pro

Ingredients

  • 1.5 oz brandy
  • 0.5 oz orange juice
  • 0.5 oz cranberry juice
  • 0.5 oz simple syrup
  • 0.5 oz lemon juice
  • 1.5 oz aquafaba (chickpea brine) (Or use 1 egg white)

Instructions:

Step 1: In a cocktail shaker, add brandy, orange juice, cranberry juice, simple syrup, lemon juice, and aquafaba.

Step 2: Dry shake for 20 seconds.

Step 3: Add ice, wet shake for 40 minutes.

Step 4: Double-strain into your glass. Fill to the brim.

Step 5: Set drink on the Ripple Maker tray. Choose your design, and print

For Ripples-topped cocktail, it’s important dry shake and then wet shake your drink when you’re using a cocktail shaker in order to create perfect foam.
